This crab has got the "Stalin Crab" since it was Stalin who wanted to import the crab to better the food situation of the Soviet Union. Today most people agree that this shouldn't have been done. It has severely changes the ecological situation along the Arctic coast.
The King Crab (latin paralithodes camtschaticus) is the highest valued species of Norwegian Lapland fisheries. The reason for this is, of course, that it has become a delicacy throughout the world. The Red King Crab is the world's largest crab species.
This crab was taken from the Pacific Ocean in the early 1960's to European Arctic waters by the Soviets. They moved around 13.000 crabs plus 1.5 million larva. They were taken mainly from the Kamchatka Peninsula area. They were all dropped into the Murmansk fiord in north western Russia (then Soviet Union).
Preboiling for Later UseOnly the legs are edible for humans.If you are not going to eat the crabs immediately, you can do something like this. After landing, the legs are sectioned. These sections are then cooked in boiling water for 10-15 minutes. Put a little salt in the water. After boiling the legs, put them in cold water, also slightly salted. Then deep freeze.
Later you can take out these frozen legs and prepare the meal. Clean the crabs, then boil or steam the for 15-20 minutes. The water can be salted or unsalted.
How to Boil Raw CrabsYou can boil the raw, not preboiled, crab legs for 20 minutes. Then it keeps the juiciness. Boil water with 20 g sea salt pr liter in a large vessel.
Put the legs into the boiling water. Don't put down too many at a time beacause the water will cool. Let the legs have a rapid boil. After a few minutes, keep the temperature just below the boiling point. After 20 minutes the legs have changes colour from brown to orange red. Let the legs cool in the boiling water.
EnjoyThe meat can be enjoyed hot or cold, plain or with melted butter, or even with garlic or different kinds of seafood sauces. The King crab is also delicious in salads, on sandwiches, and in a wide variety of other seafood dishes. If you like, you may experiment.
